Today's bread journey has been very interesting. I'm back to making the sandwich bread from the King Arthur bread book. I've made this twice before, and feel really close to dialing this recipe in.
Except... Today's dough has behaved COMPLETELY differently than either other time.
The goop stage was relatively the same, but when it came time for the first knead, this dough was INCREDIBLY tacky. Way more than it has been before. Not sure why? Maybe I didn't mix the goop enough for better absorption?? I thought I did?
But, I worked through it, kneading and adding flour until it reached the consistency I expected. Then I let it proof. At an hour it looked decent, but not as risen as in the past, so I gave it another 30m, but now I think it might be over proofed? It's still quite tacky and gassy? A much softer texture, less springy.
Still, we're rolling with it. The beauty of bread is that it will still be bread, even if it's completely different! I've got it shaped and on its final proof. I'll keep a closer eye on it for this hour.
My theory is that this is the first time I've made bread on a rainy day. I think the humidity must be way higher in the house, which has thrown off everything else. BUT, I've made this enough times now that I know what it should be like, and am hopeful that I can adjust and still have something delicious at the end.
In the meantime, I'm tucking in to read my RomCom rough draft for the first time since I finished it on New Year's Eve!

So, hey, sandwich bread bakers -
I used to hand knead my dough and my bread typically would turn out fine. Recently I’ve been playing with a few different recipes and I started using a stand mixer to knead my bread and I feel like it takes forever for the dough to get to the right consistency. Then, because I don’t want to burn my motor out, I just bake the damn thing and it comes out kinda flat.
I don’t want to go back to hand kneading, and I’m hoping maybe I just haven’t found the right recipe. Every one I’ve tried so far seems far too wet.
Anyone have any suggestions or tried and true sandwich bread recipes they wanna share?
