Ingredients: 1 cup all-purpose flour. 2 eggs. 1/2 cup milk. 1/2 cup water. 1/4 teaspoon salt. 2 tablespoons melted butter. 1 cup ricotta cheese. 1 cup cherry tomatoes, halved. 1/2 cup fresh basil leaves, chopped. 1/2 cup mozzarella cheese, shredded. 2 tablespoons olive oil. Salt and pepper to taste. Balsamic glaze for drizzling optional.
Instructions: In a blender, combine flour, eggs, milk, water, salt, and melted butter. Blend until smooth. Heat a non-stick skillet over medium heat. Pour a small amount of batter about 1/4 cup into the skillet and swirl to spread it evenly. Cook until the crepe edges start to lift and the bottom is lightly golden. Flip and cook the other side. Repeat with the remaining batter, making 6-8 crepes. In a bowl, mix ricotta cheese, cherry tomatoes, basil, mozzarella, and olive oil. Season with salt and pepper to taste. Spoon the cheese and tomato mixture onto each crepe, fold the sides in, and roll it up. Place the filled crepes in a baking dish and bake at 350F 175C for 10-15 minutes until heated through and the cheese is melted. Drizzle with balsamic glaze if desired. Serve hot and enjoy!
