Homemade pastrami is a labor of love, but the results are worth it. This recipe takes a few days to cure the beef brisket and then slow-smokes it until tender and flavorful. The spice rub gives it that classic pastrami flavor, perfect for sandwiches or enjoying on its own.
Ingredients: 1 beef brisket about 5 pounds. 2 tablespoons black peppercorns. 2 tablespoons coriander seeds. 2 tablespoons yellow mustard seeds. 2 tablespoons brown sugar. 1 tablespoon paprika. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 tablespoon kosher salt. 1 teaspoon pink curing salt optional. 1/4 cup water.
Instructions: In a spice grinder, grind peppercorns, coriander seeds, and mustard seeds until coarse. Mix ground spices with brown sugar, paprika, garlic powder, onion powder, kosher salt, and pink curing salt if using. Rub spice mixture all over the beef brisket, ensuring even coverage. Place brisket in a large resealable plastic bag and refrigerate for at least 3 days to cure. Preheat smoker to 225F 110C. Remove brisket from the bag and rinse off excess spices under cold water. Pat dry with paper towels. Place brisket on the smoker rack and smoke for 6-8 hours, or until internal temperature reaches 190F 88C. Remove brisket from smoker and let rest for 30 minutes before slicing thinly against the grain.
