Ingredients: 2 cups cooked chicken, shredded. 1/2 cup diced tomatoes. 1/4 cup diced red onion. 1/4 cup chopped fresh parsley. 1/4 cup crumbled feta cheese. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 1 package frozen samosa wrappers, thawed. 1 egg, beaten. Oil for frying.
Instructions: In a mixing bowl, combine the shredded chicken, diced tomatoes, red onion, parsley, feta cheese, cumin, paprika, salt, and pepper. Mix well. Lay out a samosa wrapper and place a spoonful of the chicken mixture in the center. Fold the wrapper over the filling to form a triangle, then continue folding in a triangular shape until the end, sealing the edges with the beaten egg. Heat oil in a deep frying pan over medium heat. Fry the samosas until golden brown and crispy, about 3-4 minutes per side. Remove from the oil and drain on paper towels. Serve hot with apple cumin chutney for dipping.
