Ingredients: 4 pork loin chops, boneless. Salt and pepper, to taste. 1 cup all-purpose flour. 2 large eggs, beaten. 2 cups breadcrumbs. Vegetable oil, for frying. Lemon wedges, for serving.
Instructions: Use a meat mallet to make each pork loin chop about 1/4-inch thick. Place each chop between two pieces of plastic wrap. Add salt and pepper to the pork chops. One shallow dish should be filled with flour, one with beaten eggs, and one with breadcrumbs. This will be your breading station. Coat each pork chop with flour, shaking off any extra. Then, dip each chop in the beaten eggs, and finally, cover each chop in breadcrumbs, pressing the breadcrumbs onto the pork to make them stick. Put the vegetable oil in a big skillet and heat it over medium-high heat. The pork chops should be fried for three to four minutes on each side, or until they are golden brown and fully cooked. Place the schnitzels on a plate lined with paper towels to drain off the extra oil. Lemon wedges should be served with the fried pork schnitzel. You can add parsley as a garnish if you want to, and serve it with your favorite side dishes.
