Instructions: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and continue to mix until well combined. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Divide the dough into two equal portions and shape each into a rectangular block. Wrap the dough blocks in plastic wrap and refrigerate for at least 30 minutes. Preheat your oven to 350F 175C and line a baking sheet with parchment paper. Take one of the chilled dough blocks and roll it out on a lightly floured surface to about 1/4-inch thickness. Use a ruler and a knife to cut the dough into rectangular cookie shapes, similar to notebook paper. Place the cookies on the prepared baking sheet and bake in the preheated oven for 10-12 minutes or until the edges are lightly golden brown. Remove the cookies from the oven and let them cool completely on a wire rack. Once the cookies are completely cool, use the assorted food coloring pens to decorate them to resemble notebook paper with lines and margins. Allow the decorating ink to dry completely. Use the black edible ink marker to write messages or draw doodles on the cookies, just like writing in a notebook. Let the ink set before storing or serving the cookies.
