★ Scorched Rice with Salted Shredded Pork ★

Made from steamed rice sliced into flat round shapes. After drying, slices of steamed rice are fried in hot oil pan until they turn yellow and crisp. Adding some topping on top such as salted shredded pork, sauce fish, red chilli and onion fat.

★ Brown Sugar Milk Tea ★

This is a bubble tea variant that has no tea in it, just fresh milk, brown sugar syrup and tapioca pearls. The tapioca pearls are cooked on low heat in brown sugar syrup so they absorb all that smoky, caramelly flavour, and these are then topped off with cold fresh milk.

Tonight your dad made fried rice and the bottom of the pan was crusted with rice. As I scrubbed at it under hot water, the smell brought me back to my childhood. Back then, after cooking rice in a pot on the stove, we would scrape up the crispy bits and add water to boil. It made the most delicious toasted rice "tea." I haven't had it for 30+ years, but the scent brought me right back. Smells are such a powerful memory-booster.
