Anguileando: ayer posteé una foto de anguila de mar fresquita que llegó a @matsueiperu este es uno de los platos que hicimos con ella. Kabayaki, primero se blanquea en agua hirviendo, con un poco de sake y konbu. Luego se lleva a la parrilla y se va pintando levemente con salsa de anguila, se le da la vuelta y se pinta de nuevo, y repetimos la operación un par de veces más. Dejamos enfriar un poquito y así quedó. Los cortamos e hicimos unos nigiris, de los que les quedaré debiendo la foto.
