A delicious and gluten-free Szechuan shrimp stir fry with fried rice that packs a flavorful punch with Szechuan sauce and a hint of spice from crushed red pepper flakes. Perfect for a quick and satisfying meal.
Ingredients: 1 lb large shrimp, peeled and deveined. 2 cups cooked gluten-free rice, chilled. 2 tbsp vegetable oil, divided. 1/2 cup sliced bell peppers. 1/2 cup sliced red onions. 2 cloves garlic, minced. 1 tsp ginger, minced. 2 tbsp gluten-free soy sauce. 1 tbsp rice vinegar. 1 tbsp Szechuan sauce. 1/2 tsp crushed red pepper flakes adjust to taste. 1/4 cup chopped green onions. Salt and pepper to taste.
Instructions: In a large skillet or wok, heat 1 tbsp of vegetable oil over high heat. Add the shrimp and stir-fry for 2-3 minutes until they turn pink. Remove from the skillet and set aside. In the same skillet, add the remaining 1 tbsp of vegetable oil. Add the sliced bell peppers and red onions. Stir-fry for 2-3 minutes until they start to soften. Add the minced garlic and ginger, and stir-fry for another 30 seconds until fragrant. Add the chilled cooked rice to the skillet and stir-fry for 2-3 minutes, breaking up any clumps. Return the cooked shrimp to the skillet and mix well. In a small bowl, whisk together gluten-free soy sauce, rice vinegar, Szechuan sauce, and crushed red pepper flakes. Pour the sauce over the shrimp and rice mixture. Stir-fry for an additional 2-3 minutes until everything is heated through and well-coated with the sauce. Season with salt and pepper to taste.
