Is Kavu Predator pretty much immune to damage from creatures with lifelink?

Not exactly.

Kavu Predator’s ability is a triggered ability, meaning when the trigger event (an opponent gains life) occurs, the Predator’s ability goes on the stack. Players can then respond and take action before the trigger responds.

If Kavu Predator is dealt lethal damage by a source with lifelink, its ability will still trigger, but the Predator will be dead long before the triggered ability resolves. When the ability does resolve, it won’t have any effect because there’s nothing left to put counters on.

Does a creature-sacrifice cost trigger "When this card dies" text? e.g. Dragon Egg and Barrage of the Expendables?

"When this creature dies" abilities trigger whenever that creature is put from the battlefield into a graveyard for any reason.

If I were to use the Nivix Guildmage's second ability to copy Wild Guess, would I still be obligated to pay the additional cost specified in the text (discard a card)? (Also, would the copy trigger Guttersnipe?)

No to both. You don’t pay costs for copies of spells, so you won’t have to discard, but you also aren’t casting the copy, so it won’t trigger Guttersnipe.
