Ingredients: 1 cup almond flour. 1/2 cup unsweetened shredded coconut. 1/4 cup chia seeds. 1/4 cup hemp hearts. 1/4 cup chopped nuts such as almonds, pecans, or walnuts. 1/4 cup sugar-free chocolate chips. 1/4 cup powdered erythritol or sweetener of choice. 1/4 cup melted coconut oil. 1 large egg. 1 teaspoon vanilla extract. 1/2 teaspoon cinnamon. 1/4 teaspoon salt.
Instructions: Preheat your oven to 325F 160C. Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal. In a large mixing bowl, combine the almond flour, shredded coconut, chia seeds, hemp hearts, chopped nuts, sugar-free chocolate chips, powdered sweetener, cinnamon, and salt. In a separate bowl, whisk together the melted coconut oil, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until well combined. Transfer the mixture to the prepared baking dish and press it down firmly and evenly. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown. Remove from the oven and let cool completely in the baking dish before slicing into bars. Once cooled and sliced, store the granola bars in an airtight container at room temperature or in the refrigerator for longer shelf life.
