Spicy Seitan Chorizo Posole by Janet Hudson

Recipe Coming! 2 tablespoons extra-virgin olive oil 1 cup seitan chorizo sausage, finely chopped 4 celery ribs, coarsely chopped 2 cloves garlic, smashed 1/2 cup shallots, thinly sliced 1 tablespoon ground cumin 1/4 cup lime juice 1 tsp chili powder 6 tbsp hot sauce 1 cup stewed tomatoes, chopped 4 cups vegetable broth broth 2 cups canned white hominy, rinsed 1/2 cup finely chopped cilantro Tortillas or Chips on the side Saute the shallot, garlic, celery and seitan in the EVOO. Add the rest of the ingredients and bring to a boil. Salt and pepper to taste and then simmer 30 minutes. Garnish with chips or knock yourself out and add lots of sides such as extra cilantro, avocado, lime slices, vegan sour cream, chilies, you name it. Serves 4-6 Heh, and if you want to add thinly sliced carrots - be my guest! We were out of carrots today.
