Roasted Baby Romaine Salad. The dressing is a mustardy, lemony, vinaigrette with some shallot and chopped rhubarb, and good olive oil. Slathered on halved lettuces and sprinkled with Seriously Sharp Cheddar, 8 minutes in a 375° oven melts the cheese and barely wilts the romaine.
