Cashew Chicken
4-6 servings
This cashew chicken is crispy and crunchy and the sauce is tangy.
Ingredients
Chicken:
1 1/2 pounds boneless, skinless, chicken breasts, (about 2 large chicken breasts) cut into 1- inch chunks
Seasoned Flour:
¾ cup all-purpose flour
¼ teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon paprika
1/8 teaspoon baking powder
Batter:
1 ¾ cups all-purpose flour
¼ teaspoon salt
¼ teaspoon black pepper
1 ½ cups cold water
Canola oil
Sauce:
1 cup Hoisin sauce
¼ cup soy sauce, low sodium
¼ cup sherry cooking wine
2 tablespoons red wine vinegar
¼ cup granulated sugar
¼ cup garlic, minced
8 ounces roasted unsalted cashews
6 green onions sliced in ¼ inch pieces
Directions
Set up a breading station to coat the chicken pieces.
In a large bowl, make the seasoned flour by combining the flour, salt, black pepper, paprika and baking powder. Add the chicken pieces and mix well to coat all the chicken.
In another large bowl make the batter by mixing the flour, salt, black pepper and cold water. Add the chicken pieces which you may have to do in batches. Coat them well with the batter and insert them into a large skillet or pot that has about 1 ½ inches of hot oil and cook them over medium heat. Cook them for several minutes on each side and you may need to cook the chicken in batches so as not to crowd the pot. Drain them on a paper towel lined large bowl or plate.
While the chicken is cooking make the sauce. In a medium saucepan combine the hoisin sauce, soy sauce, sherry, red wine vinegar, sugar and minced garlic. Cook over medium heat.
When the chicken pieces have finished cooking place in a large skillet. Pour the sauce over the chicken and stir until it is all covered and cook over medium heat. Add the cashews and sliced green onions. This should only take a few minutes.
Serve the chicken and sauce over rice. Enjoy!
Notes
Cook a pot of rice while the chicken is cooking for your meal.
Hoisin sauce is barbecue Asian sauce and is found in the international section of larger grocery stores.
This sauce requires a lot of minced garlic. You can buy minced garlic in a jar in the produce section of larger grocery stores.
