Ingredients Shortbread: 1 cup flour 1/4 tsp salt 1/3 cup powdered sugar 1/2 cup margarine Pecans: 1.5 cups chopped pecans 1/2 cup brown sugar 1/3 cup full fat coconut milk 2 tbsp maple syrup 4 tbsp margarine 1/4 tsp salt 1 tsp vanilla Instructions Shortbread: Preheat oven to 350 degrees. In a medium bowl, mix together flour, salt, and powdered sugar. Cut the margarine into chunks and use your fingers to blend it into the flour mixture until a dough forms. Divide the dough into 12 equal pieces. Line muffin tins with liners. Press each piece of dough into the bottom and up the sides of the liners, then poke holes in the dough with a fork. Freeze the lined muffin tins for 30 minutes. Bake the shortbread for 5 minutes, then rotate the tins and bake for an additional 7-9 minutes until lightly golden. Pecans: While the shortbread is baking, preheat the oven to 350 degrees again. Toast the chopped pecans for 4 minutes or until they become fragrant.
