‘In 1918, the National Apple Shippers' Association donated to the A. E F. several thousand cases of American apples. The apples were splendidly packed, arrived in remarkably good condition, and came to the soldiers as a godsend. I remember carrying a box of these apples up to a battery of Artillery, which was then stationed south of Verdun. For everyone to enjoy the contribution, the battery cook made the apples into pies. This is one of the rare instances where fresh apple-pies were served on the firing line.’

It's soon Valentine's Day. And I want to fill my days with love and sweetness. Today I've made a batch of sablée biscuits. With a marble pattern and streaks of edible gold. I'm definitely in love with this soft crumbly biscuits. Blueberry Muffins adapted from my favorite baker- The Spunky Coconut whisk together until well blended: 3/4 cup applesauce 1/2 tsp xantham or guar gum 2 TBSP flax seed meal 2 tsp apple cider vinegar then add in: 1/4 almond milk 1 tsp vanilla extract 1/4 cup coconut sugar or honey or maple syrup 1/4 cup melted liquid coconut oil 1.5 tsp baking soda 1.5 tsp baking powder 1 cup almond meal or flour 1/2 cup tapioca flour(starch) 1/2 cup coconut flour 1/2 cup fresh, frozen, or dried blueberries (I threw in frozen right from the freezer!) Optional- coconut flakes Make sure well blended. Spoon into muffin cups, sprinkle more coconut sugar and cinnamon on top if desired.
