These Smokey Sweet Potato and Black Bean Burgers are a tasty and nutritious alternative to traditional meat burgers. Packed with flavor from the sweet potatoes, black beans, and a touch of barbecue sauce, these burgers are perfect for a barbecue or grill-out. The smokiness from the paprika adds an extra layer of deliciousness.
Ingredients: 2 medium-sized sweet potatoes, peeled and grated. 1 can 15 oz black beans, drained and rinsed. 1 cup breadcrumbs. 1/2 cup finely chopped red onion. 2 cloves garlic, minced. 1 teaspoon smoked paprika. 1 teaspoon cumin. Salt and pepper to taste. 1/4 cup barbecue sauce. 1/4 cup chopped fresh cilantro. 4 burger buns. Your favorite burger toppings lettuce, tomato, etc..
Instructions: Set your grill or barbecue to medium-high heat. Grate sweet potatoes and put them in a large bowl. Add black beans, breadcrumbs, red onion, garlic, smoked paprika, cumin, salt, and pepper. Mix the ingredients together well until they are spread out evenly. Add cilantro and barbecue sauce to the mix. Keep mixing until everything is well mixed. Split the mixture in half and shape each half into a burger patty. Put the patties on a grill that has already been heated up and cook for 5 to 6 minutes on each side, or until they get a nice char and are hot all the way through. For a minute or two, toast the burger buns on the grill until they get a little brown. Put your burgers together by putting the black bean and sweet potato patty on the bun and then adding your favorite toppings. Serve the Smokey Sweet Potato and Black Bean Burgers hot, and enjoy how well the flavors go together!
