Pineapple casserole is a Southern treasure, but it's often overlooked in favor of way-less-delicious side dishes (looking at you, pasta salad). It's cheesy and buttery, but it's also crispy from the crackers, and the pineapples provide a crunch and a sweetness. Yet it never seems to make the list of Southern classics that are required at all church lunches, company potlucks, and family get-togethers.
So, in its defense, I'd like to offer a few arguments for why we should start cherishing pineapple casserole:

Everyone loves it if it’s served
You're never going to finish a serving of pineapple casserole and think "now I need something sweet" or "now I need something salty"
And if you're still standing on the wrong side of the table when it comes to pineapple casserole, at least adhere to this advice: don't yuck other people's yum.

Serves 4
Ingredients
2 Tbsp. canola oil
2 Tbsp. butter
2 lb. gold potatoes, peeled and sliced 1-inch thick
2 tsp. minced rosemary leaves
¾ tsp. salt
1 cup chicken stock
4 cloves garlic, smashed
Instructions
Position rack in upper-middle of oven and preheat oven to 500°F.
In small pot over low heat, stir oil and butter until butter is melted. On rimmed baking sheet, toss potatoes with butter-oil mixture, rosemary, and salt. Arrange potatoes in a single layer. Roast 15 minutes. Flip potatoes and roast another 15 minutes.
Carefully add stock and garlic cloves and continue roasting another 15 minutes. Transfer potatoes and garlic to serving platter, and drizzle juices from baking sheet over top. Refrigerate any leftovers.
Tip: A squeeze of fresh lemon juice at the end of baking adds another flavor dimension.

Pickled Okra Slaw

1/2 cup sliced pickled okra
2 scallions, chopped
2 tablespoons chopped fresh dill
4 cups coleslaw mix (about 8 ounces)
2 tablespoons apple cider vinegar
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper
Toss the coleslaw mix, pickled okra, the chopped scallions, and dill in a medium bowl. Add the vinegar and olive oil, season with salt and pepper, and toss.
