Did anyone else notice Simon turns his facial expressions "off" while he's talking to other people? But when he thinks he's alone, he's extremely expressive.
Look at his face when Ava can't see him. You can clearly see hope twisting into distrust and fear, looking behind him in paranoia. It's dark and he keeps shoving his whole body closer to the light of the porthole:
Compare that to when they are talking face-to-face, his eyes go almost completely dead, he's baring his teeth, the light in his eye is red instead of that sparkle we saw in the first photo:

These are art pieces and practically unobtainable. This is probably going to be a "make it yourself or close-approximation" scenario.
Detail note: Simon has a black re-fitting seam on his pants, meaning they got too small at one point. This was also part of the original pants design, but I personally like the idea he's had to repeatedly "grow" out of his clothes.
Knife Sheathe
That little rounded cut in the middle of the leather really threw me, but I found it! Took me an hour and a lot of yelling at Google Lens.
This is Simon's other knife holster (the one on his back that everyone has been struggling to find photos for, even me!) I was blessed with this knowledge by a friend who has access to the style guide.

Boots + Spikes + Gaiters
I've seen some people recommend these:

But I'm actually more inclined, personally, towards different, because his boots are olive green with a lighter sole. I can assume the color of the actual boot is lighter as it's supposed to be well-worn in the movie.
There's a really chunky high-arch, and it appears he's got some spikes on the boots. It's kind of cowboy-esc. There's a high-chance these are no-lace tanker-style military surplus boots. I'm sure these costume designers chose some weird unobtainable brain of hyper-niche shoe or some shit, so... yeah these are definitely shoes meant for armored vehicle operation. They don't have laces because they'd get caught in machinery (or at the very least, the laces are covered with a buckle).

Here's another close-contender option. I like the stripes on these.
I noticed there aren't any spikes on Simon's boots, so I went with a rubber / mildly studded version. It's got similar strap patterns. I bet you these were used so Markiplier didn't eat shit on-set. In a canon way, though, I wonder if these were his, or if the COI issued them for labor purposes. I wonder what they did with the spikes they pulled out.
These were NOT hard to find on Amazon. They're snake gaiters!
Headband + Gloves
I originally assumed that the headband was sweater material, but after something akin to critical thinking blessed me, I realized they used a hat (I caught onto this from the tunic reference image from Demobaza! Simon had a beanie at one point before he broke it down into a headband). So, grab yourself a beige beanie and snip that thing!
I think these are just some nondescript wool gloves, honestly. Here's a close contender:
Addendum Inference
People from Iron Lung hoard their belongings on their person. If you want to add depth/detail to your Simon cosplay, put trinkets/ties/similar things to the headband scrap cloth on him. It's okay if they're not from the movie! He's a hoarder.
Simon is a soldier. Almost everything he has is military-issued. He wears a lot of tactical items and once carried multiple weapons on him, not just the knife from his mom.
Dude's a freak on the down-low. There are no excuses.
If you end up buying shoes with laces on them, pull them out and use them for other things. The smallest details matter. That man would see a shoelace and see a million uses for it.
The headband is also his hair tie.
His clothes have been refitted at least once.
