Today's recipe is for chicken piccata, lightly-breaded, golden brown chicken served over white rice in a wonderfully flavorful and tart sauce that gives the dish its name. This particular recipe comes from Joy Philbin, widow to Regis Philbin. It's very quick to make and features relatively inexpensive, healthy ingredients. However, the taste--thanks to that beautiful, light sauce of chicken broth, white wine, lemon juice, and capers--is amazingly rich and indulgent. One bite of this and you'll be transported from your home kitchen to a night out at a fancy restaurant.
