A refreshing and flavorful pasta salad featuring the classic combination of pesto, cherry tomatoes, mozzarella, and olives. Perfect for picnics, potlucks, or a light summer meal.
Ingredients: 8 oz penne pasta. 1/2 cup pesto sauce. 1 cup cherry tomatoes, halved. 1/2 cup mozzarella cheese, cubed. 1/4 cup black olives, sliced. 1/4 cup red onion, finely chopped. 1/4 cup fresh basil leaves, torn. Salt and pepper to taste. Grated Parmesan cheese for garnish optional.
Instructions: Follow the directions on the package to cook the penne pasta until it is al dente. To cool down quickly, drain and rinse with cold water. Put the cooked pasta and pesto sauce in a large bowl and mix them together. Pesto should be well spread out on the pasta after being mixed. To the pasta, add the black olives, red onion, mozzarella cheese, cherry tomatoes, and torn basil leaves. Toss gently to mix. Add pepper and salt to taste. If you want, you can add grated Parmesan cheese as a garnish. Put it in the fridge for at least 30 minutes before you serve it. Enjoy the Pesto Pasta Salad while it's still cold!
