These stuffed pitas with Greek salad are a tasty and easy meal that you can make for lunch or dinner quickly. They taste great because they are full of fresh vegetables, tangy vegan feta cheese, and a simple dressing of olive oil and vinegar.

Ingredients: 2 large pitas, halved and warmed. 1 cup diced cucumber. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup sliced black olives. 1/4 cup chopped fresh parsley. 1/4 cup diced vegan feta cheese. 2 tablespoons extra virgin olive oil. 1 tablespoon red wine vinegar. Salt and pepper to taste.

Instructions: In a large bowl, combine cucumber, tomatoes, red onion, olives, parsley, and vegan feta cheese. Drizzle olive oil and red wine vinegar over the salad mixture. Season with salt and pepper to taste, then toss to combine. Stuff warmed pita halves with the Greek salad mixture. Serve immediately and enjoy!

With a zesty lime dressing, this colorful and refreshing salad has the sweetness of pineapple and the crunch of carrots. It's a great gluten-free side dish that is simple to make and tastes great.

Ingredients: 2 cups grated carrots. 1 cup diced pineapple. 1/4 cup chopped cilantro. 2 tablespoons lime juice. 2 tablespoons olive oil. 1 tablespoon honey. Salt and pepper to taste.

Instructions: Grate carrots, dice pineapple, and chop cilantro and put them all in a large bowl. Mix the honey, olive oil, lime juice, salt, and pepper in a separate small bowl using a whisk. Add the dressing to the carrot mix and mix it all together by tossing. Put it in the fridge for at least 30 minutes before serving so the flavors can mix. Enjoy! Serve cold.

This Mozzarella, Tomato, and Avocado Salad is a delightful combination of creamy mozzarella, sweet cherry tomatoes, and creamy avocados, drizzled with a tangy balsamic vinaigrette. It's a refreshing and easy-to-make salad that's perfect for a light lunch or a side dish for any meal.

Ingredients: 1 cup mozzarella cheese, diced. 2 cups cherry tomatoes, halved. 2 ripe avocados, diced. 1/4 cup fresh basil leaves, chopped. 2 tablespoons extra-virgin olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.

Instructions: Dice the avocados, cherry tomatoes, and mozzarella cheese and put them all in a large bowl. Add some fresh basil leaves on top of the mix. To make the dressing, mix the extra-virgin olive oil and balsamic vinegar in a small bowl with a whisk. Put the dressing on top of the salad. Add pepper and salt to taste. Toss everything together gently until it's all well mixed. Serve right away or put in the fridge until you're ready to eat.
