Beef and Stout Skillet Pie is a hearty and flavorful dish perfect for a cozy dinner. The combination of tender beef, stout beer, and flaky puff pastry creates a savory and comforting meal.
Ingredients: 1 lb beef stew meat. 2 tbsp vegetable oil. 1 onion, chopped. 2 cloves garlic, minced. 1 cup stout beer. 1 cup beef broth. 2 carrots, diced. 2 potatoes, diced. 1/2 cup frozen peas. 1 tsp thyme. Salt and pepper to taste. 1 sheet puff pastry. 1 egg, beaten for egg wash.
Instructions: Heat vegetable oil in a skillet over medium-high heat. Add beef stew meat and brown on all sides. Remove and set aside. In the same skillet, add chopped onion and minced garlic. Saut until softened. Pour in stout beer and beef broth. Stir to combine. Return the browned beef to the skillet. Add diced carrots, potatoes, frozen peas, thyme, salt, and pepper. Simmer on low heat for 20-25 minutes or until the vegetables are tender and the liquid has reduced. Preheat your oven to 375F 190C. Roll out the puff pastry sheet and place it over the skillet, covering the beef mixture. Brush the puff pastry with the beaten egg to give it a golden finish. Bake in the preheated oven for 25-30 minutes, or until the puff pastry is golden brown and puffed up. Serve hot and enjoy!
