INGREDIENCE

2 pieces of atsuage tofu 60 g sliced beef 1/3 leek, thinly sliced on the diagonal 1 egg 1 tbsp potato starch 1/2 tbsp sesame oil 200 cc water 1 chunk of ginger, minced 2 tbsp soy sauce 2 tbsp mirin 1 tbsp sugar

INSTRUCTIONS

1. In a bowl, combine meat, leeks, egg, and potato starch, and mix thoroughly.

2. Cut the atsuage pieces in half diagonally to form a trapezoid.* Take the cut side and cut a slit into it. Stuff the meat mixture into the pocket.

3. Heat sesame oil in a deep frying pan, set the stuffed atsuage in the pan with the cut side down, and cook until browned. Cook each side until browned, then add water, ginger, mirin, sugar, and soy sauce, and bring to a boil.

4. Reduce heat to low, cover with a drop lid, and simmer 15 minutes. Optionally, top with egg yolks and green onions to serve.

*Just watch the video but basically, don’t cut corner to corner. If you cut slightly off from the corners, it can stop it from falling apart or leaking. Overstuffing can also make it fall apart.
