Volcanic and I have talked a lot about him and think he could be a fun contender. I think he’s gotten popular across the Mario series enough to get his own spot, but the biggest concern is his lack of jumping. Still I think it’s possible and Nintendo could do something unique to work it.

As for the Ice Climbers I’d be surprised if they didn’t return since the only reason they left was technical reasons with the 3DS. It would just make sense to have them come back now.
