Hey hey, it’s #foodiefriday 😋 . Last night I made eggplant parmesan, one of my favorite veggie dishes to eat and now cook. It’s super simple and doesn’t take that long at all. Instructions below ⬇️⬇️ . 1. Cleanse and slice eggplant 2. Lightly salt the sliced eggplant and sit for 1 hour 3. Prep covering coats for prepped eggplant slices. You need 3 bowls. 1 for egg, 1 for flour and seasonings, 1 for panko. 4. Dip sliced eggplant into the egg, flour, and panko bowls in that order. 5. Bake coated eggplant for 10 mins on each side. 6. In a pan or dish layer your marinara sauce, eggplant slices, and cheese in that order until you are out of eggplant. You may or may not need 2 bottles of marinara sauce. 7.
