The “Protein’s My Jam! I Also Like Jam!” Trifle
Ingredients
4 cups cubed angel food cake
1 package Mori Nu Light Silken Tofu
2 tbsp vanilla extract
1/4 cup Splenda or other sweetener
2 tsp cinnamon
1 12 oz container of fat free whipped topping
3 cups of berries
1/4 cup blueberry jam
Steps: In a blender, blend the tofu, vanilla, cinnamon, and Splenda until smooth. Using a spatula, blend in a small bowl with 3/4 of the whipped topping. In two serving dishes, place half of the angel food cake and berries. Pour half the tofu cream on top & then drizzle half the jam. Repeat the layers until you’re out. Then top with the remaining whipped topping and serve. Voila! Ninja!
**Sidenote: this one can be made completely vegan by subbing in cake with four cups of your favorite vegan cookies or cake & doubling up on the tofu. Enjoy, plant lovers!
