I just love, so very much, how Mesh is right in the middle of the action here—like always, right in the midst of situations with Nick rather than being on the sidelines.

Because, as @blueskybuzz77 said, it would have been super easy for Mesh to sit back watching the footy or let someone else do the roast. That seems to be what most people end up doing—what with how Nick says he tends to be the one helping Eileen at Christmas while everyone's sat around chatting. (And no shade to them!)

So especially as a guest in Eileen's house, it'd make sense Mesh might be a bit timid or awkward. Not quite sure what to do with himself or what's appropriate. What will make a good impression. But I just love how he's made himself completely at home, helping Eileen with the cooking while Nick films them for posterity, grinning.

And even if Mesh didn't do any actual cooking, I love the thought of him taking up camp in the kitchen with Eileen, wanting to know what she's doing and chatting with her, being curious and wanting to learn more about her recipes. Eileen giving him Pro Tips and narrating what she's doing so he can learn. That open, engaged curiosity is so integral to the way I see Mesh.

So he could have sat back. But Mesh isn't a person, from what I've seen, who seems content with sitting back... ever. He wants to be contributing, experiencing; he wants to be of service when he can. (This is one of about billion reasons why he's so well-suited for Nick 😭)
