Class Mojito!
Ingredients:
5 to 2 oz. light rum
Juice from 1 lime (or 1 oz. bottled)
.75 oz. simple syrup
5 to 6 mint leaves
Soda water
Mint sprig or lime wedge
To prepare your classic mojito:
Muddle mint leaves in the bottom of a chilled highball glass.
Add simple syrup, lime juice, and rum.
Fill the glass with soda water, and stir.
Garnish with mint sprig or lime wedge (or both!).

Umeshu Mojito!
Ingredients:
45 ml umeshu
2 teaspoons brown sugar
8 mint leaves
2 lime wedges
Soda water to taste
Method:
Tip the brown sugar, mint leaves, lime wedges and a little soda water into the glass and muddle
Add the umeshu
Top up with soda water
Recommended by major umeshu (plum wine) distiller Choya / govoyagin.

It's Not Rocket Surgery!
ingredients:
1 oz Jamaican Pot Still rum
¾ oz Yellow Chartreuse
1 oz fresh lime juice
½ oz pineapple juice
½ oz Falernum
Splash of soda water
Empress Gin float
Fresh mint for garnish
INSTRUCTIONS:
Combine rum, Yellow Chartreuse, Falernum and lime/pineapple juice in a tall glass.
Add crushed ice and swizzle with a bar spoon or swizzle stick.
Top with more ice and add a splash of soda water.
Carefully float the Empress Gin on top, then garnish with fresh mint
