These muffins are a perfect blend of sweet and spicy, with tender chunks of apple in every bite. They are great for breakfast or as a snack, and they'll fill your kitchen with the warm aroma of cinnamon.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 tsp ground cinnamon. 1/2 cup unsalted butter, melted. 2/3 cup milk. 1 egg. 1 tsp vanilla extract. 1 1/2 cups diced apples about 2 medium apples.
Instructions: Preheat your oven to 375F 190C and line a muffin tin with paper liners. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon. In a separate bowl, mix together the melted butter, milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
