The grilled vegetables, soft pasta, and tangy balsamic vinaigrette in this Grilled Tomato and Broccoli Pasta Salad go so well together. It's great for a light lunch or as a side dish any time!
Ingredients: 8 oz pasta penne or fusilli. 2 cups cherry tomatoes, halved. 2 cups broccoli florets. 2 tbsp olive oil. Salt and pepper to taste. 1/4 cup balsamic vinegar. 2 tbsp honey. 1/4 cup extra virgin olive oil. 2 cloves garlic, minced. 1/4 cup fresh basil leaves, chopped. 1/4 cup grated Parmesan cheese.
Instructions: Follow the directions on the package to cook the pasta until it is al dente. After draining, set it aside to cool. Warm the grill up to a medium-high level. Add broccoli florets and cherry tomatoes to a bowl. Add 2 tablespoons of olive oil, salt, and pepper. Toss and mix well. For about 5 to 7 minutes, turning them over a few times, grill the broccoli and tomatoes until they are charred and soft. Take it off the grill and let it cool down a bit. To make the vinaigrette, mix the honey, extra virgin olive oil, minced garlic, and chopped basil in a small bowl with a whisk. Cooked pasta, grilled tomatoes, and broccoli should all be put together in a large bowl. Put the balsamic vinaigrette on top of the pasta salad and gently toss it to coat. Before you serve the salad, top it with grated Parmesan cheese.

Indulge in the rich flavors of Italian sausage paired with cheese tortellini in a creamy tomato sauce. This recipe combines savory sausage, tender pasta, and vibrant spinach for a satisfying meal that's quick and easy to prepare.
Ingredients: 1 lb Italian sausage. 1 package 20 oz refrigerated cheese tortellini. 2 tbsp olive oil. 4 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 1 cup chicken broth. 1/2 cup heavy cream. 1 cup fresh spinach leaves. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Fry the Italian sausage in a big pan over medium-low heat until it turns brown and is fully cooked. Take it out of the pan and set it aside. Put olive oil in the same pan and heat it over medium-low heat. Add the minced garlic and cook until it smells good. To the pan, add chicken broth and diced tomatoes with their juices. Bring to a low boil. Add the heavy cream and stir it in. Then add the cooked sausage back to the pan. For 5 minutes, let it cook. In the meantime, cook the tortellini according to the directions on the package. Remove the water and set it aside. To the pan, add cooked tortellini and fresh spinach leaves. To make the spinach wilt, stir it slowly. Add grated Parmesan cheese on top of the tortellini mix. Add pepper and salt to taste. Before serving, sprinkle with fresh basil leaves. Enjoy while hot!
