Ingredients: 1 kg beef stew meat. 2 cups La Capra Cabernet Sauvignon. 4 cups beef broth. 2 onions, chopped. 4 cloves garlic, minced. 4 carrots, sliced. 4 potatoes, diced. 2 tablespoons tomato paste. 2 bay leaves. 1 teaspoon dried thyme. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Warm up the olive oil in a big pot over medium-high heat. Put in the beef stew meat and brown it all over. Add the minced garlic and chopped onions and cook until the onions are soft. Add the La Capra Cabernet Sauvignon and stir it in. Scrape the bottom of the pot to get rid of any brown bits. Put in tomato paste, bay leaves, dried thyme, salt, and pepper. Once it starts to simmer, turn down the heat and cover. Simmer for an hour and a half to two hours, or until the beef is soft. Put in the diced potatoes and sliced carrots. Simmer for another 30 minutes, or until the vegetables are soft. If you need to, change the seasoning. Enjoy while hot!
