Sharks are one of the sea creatures that stabilised quite early in the path of evolution and has remained mostly unchanged for a long time.

Greenland Sharks (Somniosus Microcephalus) specifically can live for very long - one has been found to be at least 272 years old, making it one of the oldest vertebrates alive.

And what could be more appropriate for the “old money” theme?

The lady has some serious money, to be able to afford champagne pearls - those are pretty rare, and to collect enough large enough and high quality enough for a full parure can take years.
