This Southwest Beef and Cabbage Stir Fry is a quick and flavorful weeknight dinner. Tender beef, colorful bell peppers, and cabbage are stir-fried in a savory and spicy sauce, making it a delicious and healthy meal option.
Ingredients: 1 lb beef sirloin, thinly sliced. 2 cups cabbage, thinly sliced. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 onion, thinly sliced. 3 cloves garlic, minced. 2 tablespoons vegetable oil. 2 tablespoons soy sauce. 1 tablespoon chili powder. 1 teaspoon cumin. 1/2 teaspoon paprika. Salt and pepper to taste. Fresh cilantro leaves for garnish.
Instructions: In a small bowl, mix together soy sauce, chili powder, cumin, paprika, and a pinch of salt and pepper. Set aside. Heat vegetable oil in a large skillet or wok over high heat. Add beef slices and stir-fry for 2-3 minutes or until browned. Remove from the skillet and set aside. In the same skillet, add garlic, onion, and bell peppers. Stir-fry for 3-4 minutes until they start to soften. Add cabbage and continue stir-frying for another 2-3 minutes until the cabbage wilts slightly. Return the cooked beef to the skillet and pour the sauce mixture over everything. Stir-fry for an additional 2-3 minutes until the sauce thickens and coats the ingredients evenly. Taste and adjust seasoning with more salt and pepper if needed. Garnish with fresh cilantro leaves. Serve hot and enjoy!
