Spanakorizo - Greek Spinach Risotto
Well, since I have been on a bit of a health kick lately, I decided that Spanakorizo would have to be my go-to recipe for last nights dinner...errr and todays lunch...and maybe tonights dinner too! (Shhh)
It is a beautiful dish which is also super healthy too! Imagine that!
I got the original recipe from here. I did tweak it a bit. It's a relatively easy recipe, just takes a little bit of time.
Don't forget to serve it with a chunk of Greek Feta cheese!!
1 1/2 lbs (650 grams) spinach
1 cup chopped tomatoes (canned or fresh)
3 spring onions chopped (white and green)
2 tablespoons fresh dill, finely chopped
1 vegetable bouillon cube
Place your rice in a bowl of water to soak it. While your rice is soaking, clean, stem, and rip your spinach into smaller pieces.
In a large pot, heat your oil on medium to high heat and gently fry onions until soft and clear. Drain rice and add to onions. Cook for 5 minutes stirring constantly.
Add water, dill, lemon juice, salt and pepper and bring to a boil. When boiling, add the spinach and the vegetable bouillon. Add the tomatoes last.
Reduce heat and simmer on a medium to low heat for 20-30 minutes (depends on the rice you use)
Remove from heat. Leave tightly covered and allow it to sit for at least 30 mins before serving.

**If the liquid has not cooked out, leave it uncovered and turn your stove down to a low heat so that it boils out. Stir frequently**
