These gluten-free Spiced Cocoa Polvorones are a delightful twist on a classic Spanish cookie. They are rich, chocolatey, and spiced with hints of cinnamon and cloves. Perfect for enjoying with a cup of coffee or tea.
Ingredients: 1 1/4 cups almond flour. 1/2 cup gluten-free cocoa powder. 1/4 cup powdered sugar. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon salt. 1/4 cup unsalted butter, softened. 1 teaspoon vanilla extract. 1/4 cup sliced almonds, toasted for garnish. Powdered sugar for dusting.
Instructions: In a mixing bowl, combine almond flour, cocoa powder, powdered sugar, ground cinnamon, ground cloves, and salt. Add the softened butter and vanilla extract to the dry ingredients. Mix until a dough forms. Divide the dough into small portions and shape them into rounds or crescents. Place the shaped cookies on a parchment-lined baking sheet. Bake in a preheated oven at 350F 175C for 12-15 minutes or until set but not browned. Remove from the oven and let them cool on the baking sheet for a few minutes. While still warm, roll the cookies in powdered sugar and garnish with toasted sliced almonds. Allow the cookies to cool completely on a wire rack. Once cooled, dust with more powdered sugar if desired. Enjoy your gluten-free Spiced Cocoa Polvorones!
