Traditional pierogi dumplings and classic Reuben flavors come together in a delicious way in these Reuben Pierogies Dumplings. When you put corned beef, sauerkraut, Swiss cheese, and Russian dressing inside a crispy dumpling wrapper, you're sure to enjoy it.
Ingredients: 1 package of pierogi dough wrappers. 1 cup of corned beef, diced. 1 cup of sauerkraut, drained and chopped. 1/2 cup of Swiss cheese, shredded. 1/4 cup of Russian dressing. 1 egg, beaten for sealing dumplings. Salt and pepper to taste. Cooking oil for frying.
Instructions: In a mixing bowl, combine the diced corned beef, chopped sauerkraut, shredded Swiss cheese, and Russian dressing. Mix well and season with salt and pepper to taste. Lay out the pierogi dough wrappers on a clean surface. Place a spoonful of the Reuben mixture in the center of each dough wrapper. Brush the edges of the dough with beaten egg to help seal the dumplings. Fold the dough over the filling to create a half-moon shape and press the edges to seal, forming a dumpling. Heat cooking oil in a skillet over medium-high heat. Carefully add the dumplings to the hot oil and fry until they are golden brown and crispy on both sides, about 3-4 minutes per side. Remove the Reuben Pierogies Dumplings from the oil and place them on a paper towel-lined plate to drain any excess oil. Serve hot, optionally with extra Russian dressing for dipping.
