A delightful take on the traditional French pastry, these homemade macarons for brunch are a hit. Perfect for a special brunch gathering or a novel treat, they fuse the flavors of your favorite brunch items with the elegance of macarons.
Ingredients: 200g almond flour. 200g powdered sugar. 150g granulated sugar. 150g egg whites aged, room temperature. 1/2 tsp salt. 1/2 tsp vanilla extract. Food coloring optional. Your favorite brunch fillings e.g., bacon, eggs, avocado, smoked salmon, cream cheese.
Instructions: Sift almond flour and powdered sugar together into a bowl. In a separate bowl, whisk the egg whites until foamy, then add granulated sugar gradually while continuing to whisk until stiff peaks form. Fold the almond flour mixture into the egg whites until the batter is smooth and shiny. Add salt, vanilla extract, and food coloring if desired to the batter and gently fold until well combined. Transfer the batter to a piping bag with a round tip and pipe small macaron shells onto a baking sheet lined with parchment paper. Tap the baking sheet on the counter to remove air bubbles, and let the macarons rest for 30 minutes until a skin forms on the surface. Preheat your oven to 300F 150C. Bake the macarons for 12-15 minutes, or until they have developed feet and are set but not browned. Remove from the oven and let them cool completely on the baking sheet. Once cooled, pair up the macaron shells and fill them with your favorite brunch ingredients e.g., bacon and eggs, avocado and smoked salmon, cream cheese, etc.. Assemble the macarons, and they are ready to serve!
