Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1/2 cup brown sugar, packed. 2 large eggs. 1 teaspoon vanilla extract. 3 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 1 tablespoon ground cinnamon. 1/2 teaspoon ground nutmeg. 1/2 teaspoon ground ginger. 1/4 teaspoon ground cloves. 1/4 teaspoon ground cardamom. 1/4 cup whole milk. For Hot Cocoa:. 4 cups milk. 1/4 cup unsweetened cocoa powder. 1/4 cup granulated sugar. 1/2 teaspoon vanilla extract. 1/2 cup whipped cream. 1/4 cup chocolate shavings optional.
Instructions: Melt the butter and mix it with the white sugar and brown sugar in a large bowl until the mixture is light and fluffy. Adding the eggs one at a time and mixing them in is the next step. Put the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, cloves, and cardamom in a different bowl and mix them together with a whisk. Gradually add the dry ingredients to the wet ones, mixing in the milk every so often until everything is well mixed. Put the cookie dough in the fridge for at least an hour with the lid on. Warm the oven up to 375F 190C and put parchment paper on a baking sheet. Using a cookie scoop or spoon, drop dough onto the baking sheet in tablespoon-sized balls. For 10 to 12 minutes, or until the edges are just beginning to turn golden. Let the cookies cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way. To make hot cocoa, heat the milk in a saucepan over medium-low heat until it steams but doesn't boil. Add the cocoa powder, sugar, and vanilla extract and mix them in with a whisk until everything is well mixed. If you want, you can add whipped cream and chocolate shavings to the top of each mug of hot cocoa. Put the Speculoos cookies next to the hot cocoa and enjoy!
