what are your favorite spices?
I love cinnamon. I have sticks for making big batches of masala chai, and for putting tossing in the pot when you’re warming up apple cider. I use a fair amount of nutmeg, but usually only a little bit at a time. (I keep mine whole and grate them with a microplane when needed) You only need a whisper of it any cream sauce. I love cardamom. It’s in my pumpkin pie recipe, but it’s good in various sauces and soups. I make a carrot soup with a little cardamom. I assume we’re not talking herbs and that’s a subject you don’t want to get me started on anyway.
Of course. Salt. Pepper. Mostly I buy whole black peppercorns and grind them with a Cole and Mason pepper grinder. @turifer understands why I love my pepper mill.
Salt is a thing. I have a lot of salt. People sometimes give me various salts as gifts. Right now I think I currently have: 1. French sea salt (fine), 2. Maldon Salt, 3. gray salt, 4. Hawaiian red salt, 5. black cyprus salt, and 6. now salt from Norway that @notababoonbrandishingastick brought to me.
I went on a bit of a spree with smoked paprika about two years ago. I think I want to poke around
