Honey Spice Cake With Cream Cheese Frosting Recipe
How to make a soft and simple cake with spices and honey, topped with cream cheese frosting and fresh berries.
Ingredients:
1 ½ Cups All Purpose Flour (210g)
2 Teaspoons Baking Powder (10g)
1 1/2 Teaspoons Cinnamon (3g)
1/2 Teaspoon Nutmeg (1g)
1/4 Teaspoon Ground Ginger (0.45g)
7 Tablespoons Butter, Softened (98g)
3/4 Cup Sugar (144g)
3 Tablespoon Honey (45ml)
½ Cup Sour Cream (120g)
3 Eggs Lightly Beaten, Room Temperature
1 Teaspoon Vanilla Extract (5ml)
Frosting:
3 oz. Cream Cheese, Softened (85g)
3 Tablespoons Butter, Softened (42g)
1-1/4 Cup Powdered Sugar (150g)
1 Teaspoon Grated Lemon Zest (2g)
1 Teaspoon Vanilla (5ml)
2 Tablespoons Coconut Milk (30ml)
1-2 Cups Fresh Berries
Fresh Mint
Directions:
In a bowl, sift together flour, baking powder, cinnamon, nutmeg, and ginger. Set aside. In a large bowl, cream together butter, sugar, honey, and sour cream until light and fluffy. Drizzle in the eggs, beating only until well incorporated. Stir in the vanilla extract. Fold flour mixture into creamed mixture. Beat only until smooth.
Pour batter into a prepared 8 inch round cake pan. Smooth over top. Bake at 350 F for 35-45 minutes or until an inserted toothpick comes out clean.
Let stand in cake pan for 10 minutes, then remove to a wire rack. Let cool completely.
For the frosting, beat together the cream cheese and butter until light. Add the powdered sugar, zest, vanilla, and coconut milk; beat until smooth. Spread frosting over top of cake. Arrange fresh berries and mint on top of cake.
