These Carrot Cake Energy Bites are a tasty and healthy snack that tastes like carrot cake but doesn't make you feel bad. They are full of oats, carrots, nuts, and spices and are great for giving you energy quickly or satisfying your sweet tooth.
Ingredients: 1 cup rolled oats. 1/2 cup shredded carrots. 1/4 cup chopped walnuts. 1/4 cup chopped dates. 2 tablespoons maple syrup. 1 tablespoon coconut oil. 1 teaspoon ground cinnamon. 1/2 teaspoon ground ginger. 1/4 teaspoon ground nutmeg. Pinch of salt.
Instructions: In a food processor, blend rolled oats until they become a fine flour-like consistency. Add shredded carrots, chopped walnuts, chopped dates, maple syrup, coconut oil, cinnamon, ginger, nutmeg, and a pinch of salt to the food processor. Pulse until well combined and mixture starts to come together. Using your hands, roll the mixture into small balls, about 1 inch in diameter. Place the energy bites on a baking sheet lined with parchment paper, and chill in the refrigerator for at least 30 minutes to firm up. Once firm, store the energy bites in an airtight container in the refrigerator for up to one week.
