These vegan granola bars are sweetened naturally with dates, making them a healthy and delicious snack option. Packed with oats, nuts, and dried fruit, they're perfect for a quick breakfast or afternoon pick-me-up.
Ingredients: 2 cups rolled oats. 1 cup pitted dates, soaked in warm water for 10 minutes and drained. 1/2 cup almond butter. 1/4 cup maple syrup. 1/4 cup chopped nuts e.g., almonds, walnuts. 1/4 cup dried fruit e.g., raisins, cranberries. 1/4 teaspoon cinnamon. Pinch of salt.
Instructions: Preheat the oven to 350F 175C and line a baking dish with parchment paper. In a food processor, blend the soaked dates until they form a smooth paste. In a large bowl, combine the rolled oats, date paste, almond butter, maple syrup, chopped nuts, dried fruit, cinnamon, and salt. Mix well to combine. Transfer the mixture to the prepared baking dish and press it down firmly to create an even layer. Bake in the preheated oven for 20-25 minutes, or until the edges start to turn golden brown. Remove from the oven and let cool completely before slicing into bars. Store the granola bars in an airtight container at room temperature for up to a week.
