Ingredients: 1 medium-sized butternut squash, peeled and diced. 1 onion, chopped. 2 cloves garlic, minced. 1 tablespoon curry powder. 4 cups vegetable broth. 1 cup coconut milk. Salt and pepper to taste. 2 tablespoons olive oil. Fresh cilantro for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, saut until softened. Stir in curry powder and cook for an additional minute. Add diced butternut squash, vegetable broth, and coconut milk. Bring to a boil. Reduce heat, cover, and simmer until squash is tender about 20 minutes. Use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
