This Chicken Satay with Peanut Sauce is a classic Southeast Asian dish that's perfect for grilling. The tender and flavorful chicken skewers are marinated in a fragrant mixture of soy sauce, brown sugar, and spices, then grilled to perfection. The creamy and savory peanut sauce adds a delightful touch of richness to every bite.
Ingredients: 1 lb boneless, skinless chicken breasts, cut into strips. 1/4 cup soy sauce. 2 tablespoons brown sugar. 2 tablespoons vegetable oil. 2 cloves garlic, minced. 1 teaspoon ginger, minced. 1/2 teaspoon turmeric powder. 1/2 teaspoon cumin powder. 1/4 teaspoon cayenne pepper. Wooden skewers, soaked in water for 30 minutes.
Instructions: Put garlic, ginger, soy sauce, brown sugar, vegetable oil, turmeric, cumin, and cayenne pepper in a bowl. Add the other ingredients and mix them together. Stick the chicken strips on the wet wooden skewers and set them in a shallow dish. Make sure the chicken skewers are well covered with the marinade by pouring it over them. Marinate for at least 30 minutes, or for the best results, put it in the fridge overnight. Warm up a grill or grill pan over medium-high heat. The chicken skewers should be cooked all the way through and have grill marks after being on the grill for about 4 to 5 minutes on each side. Make the peanut sauce by putting 1/2 cup of peanut butter, 1/4 cup of coconut milk, 2 tablespoons of soy sauce, 2 tablespoons of lime juice, 1 tablespoon of brown sugar, and a pinch of cayenne pepper in a saucepan over low heat. Do this while the chicken is cooking. Warm everything up and stir it until it's smooth. Put the chicken skewers on a grill and serve them with peanut sauce on the side.
