This recipe for homemade guacamole goes great with Classic Mexican Chicken Posole. This side dish tastes great because it has creamy avocados, tangy lime, and a hint of heat from the jalapeo.
Ingredients: 2 ripe avocados. 1/4 cup finely chopped red onion. 2 cloves garlic, minced. 1-2 jalapeo peppers, minced adjust to taste. 1 lime, juiced. 1/4 cup chopped fresh cilantro. Salt and pepper to taste.
Instructions: Cut the avocados in half, take out the seeds, and scoop out the flesh into a bowl. Make the avocados as chunky or smooth as you like by mashing them with a fork or potato masher. Cut the red onion into small pieces and mix them in with the minced garlic and jalapeo peppers. Add the chopped cilantro and squeeze the juice of one lime over the top. Add pepper and salt to taste. Mix all the ingredients together slowly until they are well mixed. Try it, and if you need to, add more lime juice or seasoning.
