Ingredients: 2 cups black beans, cooked and drained. 1 cup corn kernels, frozen or fresh. 1 cup diced tomatoes. 1 cup shredded cheddar cheese. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. 1 teaspoon ground cumin. 1 teaspoon chili powder. 1/2 teaspoon garlic powder. Salt and pepper to taste. 8 small flour tortillas. 2 tablespoons olive oil.
Instructions: In a bowl, combine black beans, corn, tomatoes, cheddar cheese, red onion, cilantro, cumin, chili powder, garlic powder, salt, and pepper. Mix well. Place a tortilla on a flat surface and spoon a generous amount of the bean mixture onto one half of the tortilla. Fold the other half over the filling, creating a half-moon shape. Press down gently to seal the edges. In a large skillet, heat olive oil over medium heat. Place the quesadilla in the skillet and cook until the tortilla is golden brown and the filling is heated through, about 3-4 minutes per side. Repeat with the remaining tortillas and filling. Slice the quesadillas into wedges and serve hot.
