This vegan Roasted Broccoli & Apple Salad with Lemon Tahini Dressing is a refreshing and nutritious dish that combines the earthy flavors of roasted broccoli with the sweetness of apples, topped with a creamy and tangy tahini dressing.
Ingredients: 2 cups broccoli florets. 1 apple, thinly sliced. 2 tablespoons tahini. 2 tablespoons lemon juice. 1 tablespoon maple syrup. 1 tablespoon olive oil. Salt and pepper, to taste. 2 tablespoons chopped walnuts optional. 2 tablespoons dried cranberries optional.
Instructions: Get the oven ready by heating it up to 400F 200C. Place broccoli florets on a baking sheet and season with salt and pepper. Brush with olive oil. Broccoli should be roasted in a hot oven for 15 to 20 minutes, or until it is soft and slightly charred. Get a small bowl and mix tahini, lemon juice, and maple syrup with a whisk. This will make the dressing. Put roasted broccoli, apple slices, walnuts, and cranberries if using in a large bowl. Pour the lemon-tahini dressing over the salad and gently toss it to cover it. Serve right away or put in the fridge until you're ready to serve.
