Ingredients: 4 large russet potatoes. 1 lb shredded cooked chicken. 1/2 cup buffalo sauce. 1/4 cup ranch dressing. 1 cup shredded cheddar cheese. 1/4 cup chopped green onions. Salt and pepper to taste.
Instructions: Wash and scrub the potatoes, then pierce them with a fork. Place the potatoes in the pressure cooker with 1 cup of water. Cook on high pressure for 12 minutes, then quick release the pressure. Preheat the oven to 400F 200C. Cut each potato in half and scoop out the flesh, leaving a thin layer inside the skin. In a bowl, mix the shredded chicken, buffalo sauce, ranch dressing, salt, and pepper. Stuff each potato skin with the buffalo chicken mixture. Top each stuffed potato with shredded cheddar cheese.
