Ingredients: 1 lb chicken breast, diced. 1 can artichoke hearts, chopped. 2 cups spinach leaves, chopped. 4 cups chicken broth. 1 onion, diced. 3 cloves garlic, minced. 1/2 tsp dried thyme. 1/2 tsp dried oregano. Salt and pepper to taste. 2 tbsp olive oil.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the minced garlic and diced onions and saut until the onions are soft. When you add the diced chicken breast, cook until the chicken is no longer pink. Chicken hearts, spinach, dried thyme, and dried oregano should all be mixed in. Add the chicken broth and bring it to a low boil. Let the soup cook on low heat for 15 to 20 minutes, until the flavors blend. Add pepper and salt to taste. If you want, you can serve it hot and top it with grated Parmesan cheese.
